Ingredients

1 pound Ground beef
1 can Canned Tomatoes - do not drain
1 cup Carrots
1 cup Celery
1 cup Broccoli
0.5 cup Onion
1 box Campbell's low sodium chicken broth
Tips
Add any vegetables you like. (potatoes works well)
Can substitute ground turkey instead of beef.
Egg noodles work great with this soup for a bit of a hardy meal.
Freezes very well.
Directions
Chop/dice veggies to roughly the same size.
In a pan saute the onions, carrots, celery and broccoli with just a bit of oil or spray. Put the veggies into a big pot.
Add full can of diced (or crushed) tomatoes with liquid, and full box (about 3 cups) of chicken broth to pot. Keep on low heat.
Brown ground beef in pan until fully cooked. Drain. Add to pot with veggies/ broth.
Simmer on low for roughly 30 minutes to combine flavours.
Serving Size: Makes about 10 1.5 cups
