Ingredients

    1/2 cup peanut butter
    1/2 tsp baking soda
    1 egg
    3/4 cup brown sugar, unpacked
    1 cup white rice flour
    1/3 cup margarine

Directions

Cream margarine and sugar together until smooth. Beat in egg and peanut butter. In a separate bowl, mix rice flour with baking soda. Slowly incorporate the wet and dry mixes together, and mix well. Roll batter into small (golf ball size or smaller) balls, and place on ungreased sheet an inch or two apart. Use a fork to make a criss-cross pattern on each ball, to flatten slightly. Bake in pre-heated 350 degree oven for 8 to 10 minutes. Let the cookies set on the pan for 5 minutes, then place them on a wire rack to cool completely.
