Ingredients

    5 slices bacon, diced
    1/2 cup minced onion
    1 cup chopped celery
    1 medium carrot
    1 cup lentils, washed
    3 cups beef or chicken stock or water
    2 TBLS cornstarch (optional)
    1/2 tsp, salt
    1/4 tsp. pepper
    2 TBLS fresh or dried parsley

Directions

Saute bacon. In two and one-half quart saucepan, bring stock and lentils to a boil. Add onions, celery, carrots, salt and pepper. Cook over med-low heat for about 45 minutes or until tender. For a thicker soup, slowly stir in cornstarch with one-quarter water. Decorate with parsley.
