Ingredients

1 15 oz can of pumpkin
4 Trader Joe's Chicken Garlic Sausage Links
1/2 cup Low fat cream cheese (neufchatel cheese)
3/4 cup Sour Cream, reduced fat
1.5 cup Chicken Broth
1 tsp ground Nutmeg
3 tbsp fresh Sage leaves
1/2 cup Carmelized Onion
1 tsp Smoked Sea Salt
1 tsp Fresh Ground Black Pepper
1.5 cup Kale, chopped
5 Cloves of Garlic
1 whole Bay Leaf
13 ounces DeCecco Whole Wheat Penne (or other ww pasta)
1 tbsp Olive Oil
Tips
-If sauce is too thick, add more chicken broth or stock.
-Garnish with grated parmesan if desired.
Directions
1. In a large skillet, saute the kale, garlic, and onion (if not carmelized) in olive oil, over medium heat, until softened. Adding a splash of water will help the kale to cook more quickly.
2. Remove the kale/garlic mixture to a plate, then saute the chicken sausage in the same pan until slightly brown. Add more olive oil if necessary to prevent sausage from sticking.
3. Whisk in the pumpkin, broth, sour cream, cream cheese, sage, reserved kale and seasonings to taste.
4. Simmer 10 minutes, stirring occasionally. Reduce heat if necessary to prevent sauce from boiling.
5. Meanwhile, boil the pasta in salted water until al dente.
6. Drain pasta and return to the pot used to cook it. Pour pumpkin sauce over pasta and stir to combine.
7. Serve hot.
