Ingredients

    4 eggs
    sweetener equiv of 2 cups of sugar
    1/2 cup canola oil
    1/2 cup apple butter
    15 oz pumpkin
    2 cup wheat flour
    2 tsp cinnamon
    2 tsp baking powder
    1/2 tsp ginger
    1 tsp baking soda
    1/2 tsp salt
    1/2 tsp ground cloves
    1/2 tsp nutmeg

    Frosting

    8 oz low fat cream cheese
    1 tsp maple extract
    1/2 cup apple butter
    1/2 cup chopped walnuts
    3 oz marshmellow creme

Tips

The icing does better if you refrigerate for a bit first.


Directions

Mix wet ingredients in large bowl. In separate bowl mix all dry ingredients. Add dry to wet and mix well. Pour into prepared cupcake liners and bake for 20-25 min.
