Ingredients

21 Jumbo shells
12 oz boneless skinless chicken breast
1 small container of light ricotta cheese
3 Tb eggbeater
1 package birds eye frozen chopped spinach
2-3 Tb finely chopped basil (fresh)
pinch of garlic powder
pinch of salt (optional)
1 jar of past sauce (I used trader joes roasted garlic marinara)
Tips
Note caloric intake slightly less (left over filling was accounted for in recipe). Also, 1 serving is very large, this could easily be 4 servings (5 shells= 575 calories, 17g fat, 55g carb, 45g protein)
Directions
1) cook chicken breast in oven-- allow to cool and then finely shred
2) boil shells
3) finely dice onion and garlic, saute until soft
4) mix shredded chicken, ricotta, egg beater, spinach, and basil together
5) stuff each shell with a budging tablespoon of filling
(when stuffed you will have a small amount of filling left over
6) place each shell seam down in oven safe casserole dish
7) cover with sauce
8) Bake in oven, covered, for 20-30 minutes until warm
9) sprinkle with mozerella cheese
10) put back in oven, uncovered, bake until cheese in melted
