Number of Servings: 16

Ingredients

    Lentils (1 lb bag, sorted and rinsed)
    Kielbasa or sausage (2 lbs, cut into 1/2" pieces)
    Diced tomatoes (1 14-oz can, drained)
    Chopped onions (2 cups, I use frozen onions)
    Chopped carrots (2 cups; optional)
    Beef broth (28 oz, or 3.5 cups)
    Water (3 cups will make it soupy. If you want it thicker, use 2 cups)

Directions

Combine everything in the slow cooker
Stir
Cover
Set on low for 6-8 hours, or high for 3-4 hours.
DO NOT REMOVE THE LID WHILE IT IS COOKING.

Serve with brown rice
