Ingredients

    1 Betty Crocker Super Moist Golden Vanilla Cake Mix (18.25oz box)
    3 egg whites
    1 6oz container Danon Light & Fit Vanilla Yogurt
    2 tbsp Flax Seed Meal (ground flax)
    1 cup cold water
    1 4oz container Whitehouse Fruitastic Berry Apple Sauce

Directions


Preheat oven to 350 degrees. Spray 36 paper cupcake cups lightly with nonfat cooking spray. Mix all ingredients together by hand until blended then 30 seconds at low speed with electric beaters and 2 minutes at medium speed. Put 2 tablespoons of batter in each cup. Cook for about 18 minutes or until top of cupcake springs back when touched.

**The wonderful thing about this recipe is that you can use any kind of apple sauce or yogurt that you like (as long as the nutritional info. is about the same). Also the apple sauce replaces oil in this recipe and can do the same in many other homebaked recipes.




Makes 36 cupcakes with 2 regular tablespoons of batter each.
