Introduction

Ingredients

    5 Leaf Cabbage ( Chopped Thinly)
    1/2 Onion ( Julienned )
    3 Shiitake Mushroom
    1 Small- Medium Capsicum/ Bell Pepper( Thinly Sliced)
    1 tsp Rice Wine ( Preferably Sake
    1tsp Mirin
    1 tbsp Chinese Soy Sauce
    Salt and Pepper ( To Taste)
    3 tbsp Water
    1tbsp Sesame Oil

    Garnish:
    1 tsp Sesame Seeds

Directions

1) Prepare your ingredients:
- Devein your cabbage, the main tough vein is to be removed, before chopping it thinly.
- Julienne/ Thinly Slice the onion, before soaking it in cold water for 1 minute.
- Remove the stalk of the mushroom. Scrub the mushroom beneath a stream of cool running water. Thinly slice the caps.
- Remove the stalk of the Capsicum, but don't remove the white insides of the Capsicum/ Bell Pepper ( This part is very nutritious). Thinly slice the capsicum before soaking it in cold water for 1 minute.
- Mix the Rice wine, Mirin and Chinese Soy Sauce together. Add water.
2) Heat a heavy ware pan on high heat. Place the Sesame Oil, and sautee the Onion until transluscent.
3) Once fragrant, add the Shiitake Mushroom and Capsicum, stir- fry until fragrant.
4) Place chopped cabbage on top, and stir fry until the volume of the cabbage has reduced by 1/2.
5) Add the mixture of Sake, Mirin, Soy Sauce and Water. Cover the pan with a lid, and let these vegetables steam in the broth.
6) Stir in some Salt and Pepper to taste.
7) Serve on a plate, and sprinkle some sesame seeds to garnish.
