Introduction

Ingredients

    2 large chicken breast, halved longways
    4 slices of bacon, cooked
    4 tbs of Fat Free Feat Cheese
    2 tsp Lemon Juice
    4 tbs olive oil
    4 cloves garlic, minced
    1 tsp oregano
    salt and pepper to taste
    toothpicks soaked in water for 15 min (optional)

Directions

cook bacon. Mix oil, minced garlic clove, oregano and lemon juice in a small bowl. Coat chicken breast in oil mixture. Stuff one slice of bacon and 1 tbs of fat free feta cheese into chicken breast, secure with toothpick if needed. Sprinkle with salt and pepper to taste. Place breast in a adequate sized pan and bake at 350 for 30-35 minutes.

Serving Size: makes 4 4oz portions
