Ingredients

    2 eggs
    1/4 cup spinach
    1/4 cup diced mushrooms
    1/4 cup shredded cheese
    cooking spray
    salt & pepper to taste

Tips

if you can't fold an omelet, try just scrambling the whole thing together :)


Directions

whisk eggs until well blended and pour into a pan on medium low heat, sprayed with cooking spray

allow eggs to set a minute and then add on other ingredients, cover pan to wilt the spinach

fold omelet and enjoy
