Ingredients

    1 pre-cooked rotisserie chicken
    2 - 14 oz. cans chicken broth
    1 extra large can tomato puree
    1 - 14 oz. can diced tomatoes
    2 c. fresh baby spinach leaves
    1 small onion, diced
    1 c. baby carrots, sliced
    1 clove garlic, minced
    1 whole zucchini, sliced and quartered
    2 stalks celery, sliced
    2 T. parsley
    2 T. basil
    2 T. oregano

Tips

Optional, but not included in nutritional info:
Add pasta, such as rigatoni


Directions

Remove chicken from the bone, set aside in a bowl and refrigerate until needed (freeze the amount not used in this recipe)

Chop all vegetables and add all ingredients, except chicken, in crock-pot

Simmer on low for 8 hours or high for 6 hours

Add chicken during last 10 minutes of cooking to heat through

Serving Size: Makes approx. 10 - 1 cup servings
