Introduction

A Weight Watcher's Dish that we love but changed up a bit for our own nutritional goals (less meat and more veggies) - we reduced the amount of meat and doubled the amount of broccoli rabe. And I cube the chicken to mix into it.
Also, very good as left overs.

Ingredients

    2 bunch broccoli rabe - cleaned and chopped
    6 oz. fettuccine
    4 tsp. olive oil
    12 oz. boneless skinless chicken breast - cubed
    1 tsp. sea salt
    1 tsp. oregano
    1/4 tsp. crushed red pepper
    1 med. onion - thinly sliced and separated into rings
    4 cloves garlic - crushed
    2 tbsp. parmesan cheese
    1/4 tsp. fresh ground black pepper

Directions

In large pot of boiling water, cook the broccoli rabe 2 minutes. With a slotted spoon, transfer to a bowl. In the boiling water, cook the fettuccine according to package. Drain.
In large skillet, heat 2 tsp. of olive oil. Add the chicken, salt, oregano, and red pepper and saute until cooked through. Transfer to plate.
In the skillet heat the remaining 2 tsp. olive oil, saute onion and garlic unti tender. Stir in the broccoli rabe and cook stirring frequently until tender.
Add fettuccine, chicken, sprinkle with parmesan cheese and black pepper.
