Introduction
Tried out this recipe after my husband accidently brought home blue cheese instead of feta. Meat, vegetable, cheese and grain all in one recipe. Serve a salad and you will be satisfied AND full. Ingredients
-
1 lb. ground chicken
1 - 10 oz. frozen package spinach
1/2 cup crumbled blue cheese
Garlic salt and pepper to taste
Spray Pam
1 - tsp. olive oil
Hamburger bun (included in nutrition calculations)
Tips
Cooking at medium high heat will "sear" the cheese so it doesn't "run". (Don't cook all the way up on high, because your burger will be brown on the outside, but not be cooked inside).
Directions
Thaw spinach in microwave, and wring out in towel until all the liquid is removed.
Mix together in large bowl: Chicken, Spinach, Cheese. Season to taste.
Divide into 4 patties (consistency is sticky since there is very little fat in the ground chicken).
Spray Pam into skillet, as well as 1 tsp olive oil.
Cook patties over medium high heat 4-5 minutes on each side. Make sure they are cooked through. They will brown nicely!
Place on hamburger bun and enjoy. (optional any kind of bun or bagel thin, and add sliced tomato, etc).
Serving Size: Makes 4 patties
Number of Servings: 4
