Ingredients

    Gluten free flour self rising
    Milk (I use soy)
    Eggs
    salt

    peanut butter
    jam

Tips

These really are quite simple once you get the hang of it, and they are great for gluten-free sandwiches at lunchtime. Try using other fillings - they are amazing with a square of chocolate in the middle instead of peanut butter and jelly.


Directions

To make these, use an ebleskiver pan (available at Williams Sonoma or try the web).

Mix flour, milk, eggs and salt together for about 3 minutes at medium-high speed (to develop xantham gum in flour).

Add a generous teaspoon of batter to each depression in pan. Add 1/2 tsp each of peanut butter and jelly. Cover with an additional teaspoon of batter.

Flip the ebleskiver with tongs or spoon and knife (I use a butter palate knife and a long-handled coffee spoon.)

Cook these as you would pancakes - it takes a little practice, but soon becomes very simple.
