Ingredients

16 oz Johnsonville Regular Pork Sausage (or similar ground pork)
2 1/2 cups Better N eggs plus calcium & omega 3 egg substitute
2 1/4 cup non-fat milk
1 1/2 tsp ground mustard
1/2 tsp ground pepper
2 cups shredded 2% shredded cheddar cheese
2 cups (3 slices) whole grain bread
1/2 cup diced sweet red pepper
1/2 cup diced sweet onions
salsa (optional)
sour cream (optional)
(salsa & sour cream not added in calorie count)
Directions
Preheat oven to 350 degrees. In a large skillet, cook and crumble sausage over medium heat until no longer pink. Add red pepper and onions; saute until tender. In a large bowl, combine the eggs, milk, mustard, bread crumbs and pepper. Add cheddar cheese and sausage mixture, mix well. Pour into a greased 13" X 9" X 2" baking dish. Bake for 35-40 minutes until knife inserted in center comes out clean. If desired, serve with sour cream and salsa as toppings.
Tip: For easy brunch entertaining you can make this recipe the night before. Assemble ingredients, place in pan, cover and store in refridgerator overnight prior to baking. Bake uncovered at 350 degrees for 40-45 minutes or until knife inserted in center comes out clean.
