Introduction

Ingredients

    150g cherry tomatoes
    3tbsp Olive oil
    500ml Chicken Stock
    200g lentils
    1 red onion, finely diced.
    2 garlic cloves, finely diced
    0.5 tsp ground cumin
    30g black pepper
    2 x 115g tuna steaks
    Juice of 1 lemon

Directions

-Preheat oven to 190C/ Gas Mark 5. Place tomatoes into a roasting tin with 1tbsp of oil and roast for 15mins.

-In a hot frying pan, add 1tbsp of oil and fry red onion until soft. Add the garlic and cumin and cook for another minute. Put to one side. Pour the chicken stock into pan add lentils and cook til soft, then drain and mix with onions.

-Tip black pepper into a saucer and coat both sides of both tuna steaks. In hot pan, add rest of olive oil and sear each side for 4-5 minutes.

-To serve, slice tuna and serve of bed of lentils with Roasted Tomatoes and drizzle of lemon juice.
