Ingredients

    1 pound ocena perch or other lean fish filet
    2 tablespoons dry bread crumbs
    1 tablespoon grated reduced-fat Permsan cheese blend
    1 tablespoon chopped fresh (or 1 teaspoon dried) basil leaves
    1/2 teaspoon paprika
    dash of pepper
    1 tablespoon margarine or spread, melted
    2 tablespoons chopped fresh parsley

Directions

Move oven rack to position slightly above middle of oven. Heat oven to 500 degrees. Spray rectangular pan, 13x9x2 inches with nonstick cooking spray.
Cut fish into 4 serving pieces. Mix remainining ingredients, except margarine and parsley. Brush one side of fish with margarine. dip into crumb mixture. Place fish, coated sides up in pan.

Bake uncoveered about 10 minutes or until fish flakes easily with fork. Sprinkle with parsley.

Makes 4 servings

    This was AWESOME!
    Easy to make and tender, tender, tender - the butter spread, maybe?
    I served it with carrots and brussels sprouts.
    The kids ate it up and wanted more.
    My only rec: Tell people to double the recipe because the kids will want MORE!
