    Cheese flavored egg substitute, one carton
    Half block of firm tofu
    Half cup frozen broccoli or favorite veggie
    Scant half cup shredded 2% cheese


Chop tofu into bite size pieces and mix everything but the shredded cheese together, pour into Pam-ed pie pan. Cook for 30 minutes on 350F, sprinkle cheese on top and cook an additional 20 minutes. Makes 4 HUGE servings!

    My family loved this recipe. I added an extra cup of
    broccolli and 1/2 cup of fat free cheddar cheese. I
    couldn't find egg substitute with chees, so I improvished with the fat free cheddar and it tasted great.

  • I prepared this for lunch today and my wife and I loved it. I had to improvise for the egg cheese substitute as NAHZEEJUNE did and it turned out great! I have been searching for meals easy and low in sodium and this is a good one. - 6/18/09
