Introduction

Amazing Soup. Perfect for a cold day. I usually buy a 1 or 2lb tray of ground Italian Sausage, not the links. Makes it easier to sautee! Also easy to freeze, prep everything except the spinach, and freeze in bags. When ready, reheat and add spinach! Amazing Soup. Perfect for a cold day. Ingredients

    1 or 2lbs Italian Sausage casings removed, depending on how meaty you like it!
    Olive oil- enough to sautee sausage and onions in
    1 Yellow Onion
    3 cloves garlic chopped
    2 32oz boxes of Chicken Broth
    2 cans of Italian Style Stewed Tomatos
    1 bag of frozen spinach
    Salt and Pepper to taste

Directions

Sautee Sausage, garlic and onions in olive oil over medium heat. Add Chicken Broth and Tomatoes, bring to a boil. Let simmer over low heat for 30 minutes. Add spinach, and stir. Allow to boil for an additional 2 to 3 minutes. Serve and Enjoy!

Serving Size: Makes 8 to 10 1 cup servings.
