Introduction

Ingredients

    2 1/2 cups rolled oats (old fashioned)
    1/4 cup oat bran
    1/4 cup steel cut oats
    2 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon
    1/4 cup sugar
    1/4 cup brown sugar (unpacked)
    2 cups milk
    1 egg beaten
    1/3 cup apple sauce
    1/4 cup cooking oil
    2 cups fruit of your choice (apples, fresh cranberries, raisins, bananas, blue/straw/blackberries all work well)

Tips

I usually serve it warm with milk or cold with yogurt and it will keep me full for a good 4 or 5 hours until lunch time. Also freezes well so it can be made and divied up into daily servings and reheated in the mornings.

note: I use 2% milk so the calorie count could be reduced by using a lighter milk. The nutrition info is based on using one apple, 1 cup fresh cranberries and 1/4 cup raisins. Also you can use less sugar to taste and change up the spices - I've added vanilla extract, substituted cardamom, and substituted coconut milk for the dairy all with good success. Other mix ins like almonds, pecans or walnuts can be used too.


Directions

Preheat oven to 400 F

in a large bowl, combine dry ingredients and in a medium bowl mix wet ingredients. Add to dry mix and stir until just combined. Place mix into a baking dish and bake 20 minutes uncovered.

Remove from oven and stir mixture, gently fold in fruit. Bake uncovered for another 20 min until top is lightly browned.
