Number of Servings: 4

Ingredients

    4 frozen salmon filets (I use High Liner)
    1/2 bag frozen chopped broccoli
    1 TBSP + 1 tsp margarine
    2 TBSP flour
    1 cup skim milk
    1 cup shredded low fat cheddar cheese
    1 pkg instant mashed potatoes, prepared

Tips

* much less sodium if you prepare your own fresh potatoes


Directions

Place frozen salmon in bottom of casserole, try not to overlap. Layer 1/2 bag frozen chopped broccoli over salmon. Prepare cheese sauce using flour, margarine, milk and cheddar cheese. Pour prepared sauce over filets and broccoli. Place mashed potatoes on top. Bake at 375F for 45 minutes.

Serving Size: makes 4 portions, 1 filet and toppings per portion
