Introduction

Very easy soup recipe that my family requested every week. My picky kids, who won't usually eat any vegetables, eat at least 2 servings each! Very easy soup recipe that my family requested every week. My picky kids, who won't usually eat any vegetables, eat at least 2 servings each!
Number of Servings: 1

Ingredients

    2 boneless, skinless chicken breasts
    1-15.9 oz can diced tomatoes, no salt
    2 cups fresh baby spinach
    1 Tbs basil
    1 Tbs oregano
    1 clove garlic, minced
    1 cup white rice
    salt, pepper, & grated parmesan to taste

Tips

More rice can be added for a thicker base, or can be completely left out & soup served with bread sticks or over pasta.


Directions

Boil chicken breasts over high heat in stock pan till done (approx. 15 mins). Remove to cool & add rice to stock, boiling for approx 12 mins. Shred chicken & add to rice along with can diced tomatoes, spinach, basil, oregano, garlic. Add salt & pepper to taste. Continue to boil on med heat for 5-7 mins. Serve with grated parmesan, if desired.
