    Bob's Red Mill Gluten-Free Cornbread Mix
    1 1/2 cups unsweetened rice milk
    1/3 cup unsweetened applesauce
    2 eggs
    1/2 fresh jalapeno, diced
    1/2 cup corn kernels

Tips

Also nice as muffins, but be sure to adjust calculations accordingly, since I think I get only 12.


Directions

Follow instructions on cornbread mix package, folding in veggies at the end of the mixing.

Serving size: One 9x9-inch pan makes 16 square pieces.
