Introduction

Ingredients

1.5 cups wheat bran
1 cup nonfat milk
1 tbsp white vinegar
1 egg
3 tbsp molasses
2/3 cup Splenda or store brand sucralose
2 tbsp canola oil
1 medium apple, shredded (with peel)
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
dash of salt
3/4 cup non packed raisins
Tips
Once mine are cooled, I individually wrap mine and freeze them. Take one out before bed and it's perfect for a quick and easy breakfast.
Directions
1. Mix bran with milk and vinegar. Allow to sit for 5 minutes.
2. Meanwhile, mix egg, Splenda, oil and molasses until well blended.
3. Mix in bran mixture and shredded apple.
4. Stir in flour, baking powder, baking soda and salt until just mixed. Fold in raisins.
5. Bake in paper lined muffin cups or non stick muffin pan sprayed with Pam for 15-17 minutes at 400 degrees. Cool.
