Introduction

Number of Servings: 6

Ingredients

    2 cups chopped leftover roast chicken (breast, leg, thigh)
    1 tablespoon canola oil
    1/2 large spanish onion, chopped
    1 tablespoon curry powder
    1 tablespoon chili powder
    1/2 tsp garlic powder
    3 tablespoons soy sauce
    1 tablespoon worcestershire sauce
    1-1/2 cups uncooked long grain white rice
    Water as needed

Tips

Add more or less spices to adjust to your taste buds.
If you don't have leftover chicken use boneless, skinless pieces and cook thoroughly in the first step.


Directions

Heat oil in large frying pan. Add chopped chicken, spices, soy sauce and worcestershire sauce. MIx chicken to coat and cook until heated through. Turn off heat and let sit 1/2 hour. Meanwhile, cook rice. Add onions to chicken and cook until they are translucent. Add rice and mix thoroughly. Add more water if needed to keep moist.
