Ingredients

    1 lb dried Cannellini Beans
    1 pkg Smoked Polish Sausage (I used Hillshire Farms), halved lengthwise and sliced
    1 med onion, diced
    6 cloves garlic, minced
    1 tsp dried rosemary
    5 oz baby spinach
    1 qt chicken stock
    1 cup water
    1 14oz can diced tomatoes
    salt & pepper to taste

Directions

Combine all ingredients except spinach in crockpot and cook on low for 7-8 hours or high for 4-6, until beans are tender. Turn crockpot off and stir in spinach to wilt.

Serving Size: Makes about 8 servings
