Ingredients

    6 Eggs
    1 package of Bob Evan's Original Pork Sausage (only use 1/2 of package unless doubling the recipe)
    2/3 cup Shredded Cheese
    1/4 cup Fresh Spinach-torn into small pieces

Directions

Cook sausage in a pan while breaking it apart, until brown. Beat 6 eggs in a bowl. In a muffin pan evenly add sausage, torn up spinach, and cheese. Mix it up with a spoon so it's not layered. Then evenly pour egg mixture over each.

Bake in the oven at 350 F for 20 minutes.

Serving Size: Makes 6 muffins.
