2 tablespoons grated lemon rind (about 3 lemons)
    1 tablespoon extravirgin olive oil
1 1/4 teaspoons black peppercorns, crushed
    1/2 teaspoon salt
    2 garlic cloves, minced
    4 (6-ounce) flounder fillets
    Cooking spray
    Lemon wedges (optional)
    20 Asparagus Spears

Mix first 5 ingredients in a bowl. Divide the lemon pepper among the fish fillets and spread. Wrap each fillet around five asparagus spears; secure with toothpicks. Place in a 13-in. x 9-in. baking dish or jelly roll pan, coated with cooking spray. Sprinkle with salt and pepper.
Cover and bake at 350 for 15 minutes, until fish flakes easily with a fork and asparagus is crisp-tender.
