Introduction
Quick, easy, delicious winter time snack. Quick, easy, delicious winter time snack.Number of Servings: 20
Ingredients
-
15 cups air popped popcorn
1 c (2 sticks) butter
2 c brown sugar (I prefer darker brown sugar)
1/2 c black strap molasses
2 tsp kosher or sea salt
1 tsp baking soda
1 tbsp good vanilla extract (Mexican extract is exceptionally good!)
Tips
Can spruce up with oven roasted pecans or walnuts, tossing in with popcorn.
Directions
Pre-heat oven to 200 degrees F.
Pop popcorn in air-popper and place into very large mixing bowl. I use a turkey roasting pan.
Combine butter, brown sugar, and molasses in sauce pan over medium to medium high heat. Bring mixture to a boil, stirring constantly to avoid scorching. Once mixture is boiling, continue stirring and boiling for five minutes. Remove from heat.
Add vanilla extract, salt, and baking soda to mixture, continuing to stir. Mixture will get foamy.
Pour mixture over popped corn, and stir to coat all corn. Place mixture into heated oven for 30-45 to dry, stirring every 10 minutes to avoid scorching in pan. Dry to consistency of preference.
Serving Size: Makes 15 to 20 1 cup servings
