Ingredients

    2 cups instant brown rice, cooked
    Celery, raw, 1 cup, diced
    Peppers, sweet, red, fresh, .5 cup, sliced
    Green Peppers (bell peppers), 0.5 cup, chopped
    Onions, raw, .75 cup, chopped
    Mushrooms, fresh, 1 cup, pieces or slices
    Ginger, ground, .5 tsp
    Garlic, 1 tsp
    Soy Sauce, 1 tbsp
    Olive Oil, 1 tbsp
    Shrimp, raw, 8 oz
    Egg, fresh, 1 large





Directions

In a small bowl beat egg, set aside.
Heat oil in a lg skillet on med. high, add rice, veggies, ginger & shrimp. Cook until veggies are tender.
Clear out the center of pan by pushing rice mixture to the sides.
Pour egg into space. Scramble until almost firm. (about 1 min)
Mix rice mixture together with egg. Cook 1 min.
Add soy sauce, stir.
Serve immediately.
