Number of Servings: 4

Ingredients

    5 cups medium green tomatoes, sliced thin
    1 teaspoon sugar
    1 teaspoon salt
    1/2 teaspoon pepper
    1/2 cup panko breadcrumbs
    1 cup of fat-free shredded cheddar
    1 tablespoon butter, softened*
    Spray olive oil (I use my misto)

Directions

1. Arrange one layer of tomatoes in the bottom of 1 ½ quart casserole.

2. Sprinkle with sugar, salt and pepper 1/3 of bread crumbs and 1/3 cheese.

3. Repeat layers twice omitting the cheese from the top.

4. Dot butter over the bread crumbs on top.

5. Cover and bake at 400 degrees for one hour.

6. Add remaining cheese, spritz with spray olive oil, and bake uncovered until cheese melts.
