4 c uncooked yolk-free noodles
1 can (10-3/4 oz) red.-fat, red.-sodium condensed cream of chicken soup, undiluted
4 oz fat-free sour cream
1 c (8 oz) plain fat-free yogurt
1/4 c fat-free milk
3 tbsp minced fresh parsley or 1 tbsp dried parsley flakes
1 tsp onion powder
1/4 tsp salt (opt)
2 c cubed cooked chicken breast
1.5 c mushrooms, sliced (amt can vary according to preference)
1.5 c spinach, cut in strips (amt can vary according to preference)
1 c crushed red-fat butter-flavored crackers *about 25
3 tbsp red-fat butter, melted
Directions
serving dish = 13x9x2 casserole/baking dish
makes 8 servings
1. Cook noodles according to pkg.
2. Combine soup, cream cheese, sour cream, yogurt, milk, parsley, onion powder and salt in a large bowl. Stir in chicken, mushrooms and spinach.
3. Drain noodles; toss with chicken mixture.
4. Transfer to baking dish coated with cooking spray
5. Combine cracker crumbs and butter; sprinkle over casserole.
6. Bake uncovered at 350degrees for 40-45min or until heated through
