Ingredients

1 TBSP Olive Oil
6 Garlic Cloves
1 Medium Yellow Onion - diced
2 Cups sliced mushrooms
1/2 Cup Sweet white wine
1/4 tsp crushed red pepper flakes
1 Pound raw shrimp - peeled and deveined
2 Cans Italian Style Diced Tomatoes
6 Fresh Basil Leaves - minced
Directions
It is important to have your veggies prepped before you heat your olive oil. Go ahead and crush the garlic, dice the onion and slice the mushrooms.
Make sure your raw shrimp is peeled and deveined before you start.
Spray large skillet and heat over medium heat. Add 1 TBSP Olive Oil. Allow to heat for about a minute and carefully put your onions and garlic in the skillet. Allow them to saute slowly over medium-low heat. Once they are carmelized, add 1/2 Cup sweet white wine. Allow the white wine to reduce for 5 minutes. Next, stir in your mushrooms and saute for 4 minutes.
Once the mushrooms, onions and garlic have simmered in the white wine, add the 2 cans of Italian style tomatoes (diced). Reduce heat to simmer. Cover and simmer 8 minutes. If you like a thinner sauce, reduce simmer time. If you like your sauce thicker, increase the simmer time. Keep in mind that you will simmer one more time when you put the shrimp in.
Now, add your crushed pepper flakes and the shrimp. Cover and simmer an additional 8 minutes. (This timing can vary depending on the size of your shrimp. I used large gulf shrimp, so they needed the extra time. Smaller shrimp will only take 5-6 minutes. When your shrimp has curled into a "C" shape, it is done).
Remove from heat, sprinkle with fresh basil and serve over pasta or spaghetti squash!
