Introduction

Number of Servings: 12

Ingredients

    1 cup yellow cornmeal
    1 cup flour
    2 tbsp sugar
    1/2 tsp salt
    2 tsp baking powder
    1 tsp baking powder
    1 cup non fat milk
    1 tsp vinegar
    2 eggs
    1 smokie link, diced small
    1 cup loosely packed shredded cheddar cheese

Tips

I normally use whole wheat flour but was out so used white for this recipe. Nutrition would be better with the whole wheat flour. These muffins could be dipped with ketchup and/or mustard or are good just the way they are. Also good to add a bit of garlic powder and/or onion powder to the dry ingredients.


Directions

1. Mix dry ingredients.
2. In separate bowl, whisk eggs and oil. Add milk mixed with vinegar.
3. Pour milk, egg, oil and vinegar mixture into dry ingredients and mix until just mixed.
4. Fold in cheese and smokie.
5. Put into muffin cups either lined with paper or sprayed with cooking spray and bake for about 14-15 minutes at 400 degrees. Cool.

Serving Size: Makes 12 muffins
