Ingredients

5 eggs
1% milk
cheddar cheese
zucchini
spinach
garlic
water
salt
pepper
Directions
saute garlic in 1 tbsp butter for a minute or 2 over med high heat
in the meanwhile beat the eggs with a dollop of milk and water and 1/4 tsp salt and pepper
throw in zucchini and saute until soft and there is no water in the pan (because they sweat a bit)
add spinach and let it wilt
pour egg mixture into the omelet pan
lower the heat to medium to medium low heat (depending on your stove) and cover
let the omelet cook through only uncovering to loosen the sides
when it is almost cooked take a plate place it on top and flip the omelet onto the plate. Then, slide the omelet back into the pan and put cheese on 1/2 of the circle. (unless you are a pro and can just flip it in the air... that would not happen in my kitchen.... and no I am not going to try) cover again and lower the heat to low.
in a minute or 2 the cheese should be melted
slide half of the omelet onto a plate then fold the other half on top to make the omelet shape.
I like to serve with buttered whole wheat toast...
