Introduction

Yummy side dish for just about anything you pair it up with. Add a veggie and whatever protein entrée you have in mind, for a filling and tasty delight. Ingredients

    1/4 C. Ancient Harvest Quinoa
    1/2 C. water
    1 t. olive oil
    1 T. celery, finely chopped
    1 T. onion, finely chopped
    1 T. carrot, finely chopped
    1/2 T. green pepper, finely chopped
    1/2 T. sweet red pepper, finely chopped
    1/4 t. oregano, or to taste

Directions

Combine 1/4 c Quinoa and 1/2 c water and bring to a boil. Boil 5 minutes, remove from heat, cover and let stand 10 minutes.
While Quinoa is sitting, heat olive oil in small skillet. Add all veggies and sauté until just tender.
Combine veggies and Quinoa and season with oregano.

Serving Size: Makes 1 serving
