Ingredients

    Onions, raw, 1 medium, chopped
    Carrots, raw, 1 large, chopped
    Shallots, 1 tbsp chopped, finely chopped
    *Potato, raw, 1 large (3" to 4-1/4" dia.), diced
    Olive Oil, 1 tbsp
    Vegetable Broth, 4 cup
    Lentils, 1 cup
    Morningstar Farms Breakfast Patties, 6 patties


Tips

For meatlovers, substitue Kielbasa or favorite sausage.

For vegans/vegetarians, substitute favorite sausage substitute or add other vegetables/beans like kale, chickpeas, etc.


Directions

Saute onions, carrots and shallot in oil on med-high heat until soft and fragrant. Add vegetable broth, bring to a boil, add potato and lentils. Simmer covered 20 min. Microwave patties, then slice into bite size pieces. Add patties to soup, simmer a few minutes more, then serve.

Serving Size: Serves six. Generous 1C+ portion per serving.
