Number of Servings: 6


    Mushrooms, fresh, 2 cup, pieces or slices
    Onions, raw, .5 sliced, large (1/4" thick)
    Celery, raw, 3 stalk, large (11"-12" long)
    Garlic, 2 cloves
    Tomato Paste, 1 can (6 oz)
    Salt, 2 tbsp
    Pepper, black, 2 tbsp
    *Turkey, Ground turkey, 93% lean, 20 oz
    Yellow Peppers (bell peppers), 3 pepper, large (3-3/4" long, 3" dia)
    Whole Wheat Whole Grain Spaghetti Pasta, 6 servings


Slice/Dice all veggies. Change serving sizes for garlic and/or onion to desired taste. Brown ground turkey. Mix in veggies and season to taste. Mix in tomatoe paste and add water until sauce reaches desired consistency. Boil the noodles until al dente (firm to the bite). Remove from heat and drain noodles. Scoop 1 serving of noodles onto plate and pour sauce over top. Yields approximately 6 servings.

    The next time I make this I will cut down on the black pepper. Also, I added some oregano for taste. - 8/23/11
