Ingredients

    3 very ripe bananas
    1/4 cup canola oil
    1 egg
    1 egg white
    1 tsp vanilla
    1/2 cup brown sugar
    2 cups all-purpose flour
    1 tsp baking soda
    1/4 tsp salt
    1-1/2 cup of semisweet choclate chips

Directions

Makes 12 muffins.

Preheat oven to 375°. Coat standard 12- cup muffin tin with non stick cooking spray.

In medium bowl, mash bananas. Add oil, egg, egg white, vanilla and brown sugar; stir well. In large bowl, whisk flour, baking soda, and salt. Pour in banana mixture; stir. Gently mix in chocolate chips.

Spoon batter into prepared muffin cups, filling each two-thirds full. Bake 25 minutes or until toothpick inserted in center comes out clean.

Cool in muffin cups 5 minutes. Remove from cups and cool completely. (or serve slightly warm!)
