Ingredients

    2 tbsp canola oil
    2 beef shanks
    1 can ground tomatoes
    1 onion
    4 cloves garlic
    1 carrot (large)
    3 stalks celery
    1 small red pepper
    1tbsp tomato paste
    italian herbs
    1 tbsp sugar substitute
    1/4 cup red wine vinegar
    1/2 cup red wine

Tips

If cooking on low, can be prepared night before, and packed as a hot lunch with 4 oz. cooked whole wheat pasta.


Directions

Start on stove, finish in crock pot.
1. Prepare sauce: start crock pot on high. Using a mixing bowl, combine can of tomatoes, italian spices, vinegar, and sweetener. Pour the combination into the crock pot over the back of a wooden spoon (prevents splashing).
2. Prepare veggies: Chop onion, garlic and set in small bowl. Chop to small pieces celery, carrots, red pepper and set in a bowl. These will be stir fried to flavor the pan.
3. Prepare meat: Using a heavy pan, on medium heat, place oil in pan and when hot, add in onion and garlic. Stir one minute, then add rest of veggies. Stir and saute for three minutes. Add tomato paste, stirring to coat all veggies, and cook an additional two minutes. Remove veggies to crock pot, and add in red wine.
4. Place beef shanks and turn when they move easily (about 5 minutes per side). Set beef aside for 5 minutes to run juices. Add beef to crock pot, with all juices.
5. Stir completed crock pot contents, cover and cook (4) four hours on high, or (6) hours on low.
