Introduction
I LOVE Shrimp Scampi. And I LOVE the lower calorie version that Wildtree nailed with their 'Scampi Blend' Seasoning. So, I decided I would try to make a Cod version as my 5year old does NOT like shrimp. I LOVE Shrimp Scampi. Ingredients

4 - SAM's Icelandic Cod Fillets (about 5oz per fillet)
1 & 1/2 tsp Wildtree Scampi Blend Seasoning
1 & 1/2 tbspn Extra Virgin Olive Oil
1/4 tsp - McCormick & Co Old Bay Seasoning
Tips
In the picture I provided, I prepared the Scampi sauce per Wildtree Scampi Blend (3tblspn olive oil), since then I used half the olive oil and drizzled that directly over fish then sprinkled with the Scampi Blend... much better.
Directions
Preheat Oven to 350 degrees. Place defrosted fish fillets in a baking pan. Drizzle Olive Oil, then sprinkle Scampi Blend over fish. Bake 15-20minutes (until flakes easily).
