Introduction

Inspired by Jamie Oliver's Thai Chicken Laksa from Jamie's 15 Minute Meals book, subbing chicken for Tofu and making some other minor adjustments to make the recipe vegan.

Ingredients

    Tofu:

    Tofu, soft, 1 block (remove)
    *Chinese Five-Spice Powder, 2 tsp (remove)
    Agave Nectar (Wholesome Organic Blue Agave), 1 tbsp (remove)
    *Sesame Seeds, 1 tbsp (remove)
    Jalapeno Peppers, 1 pepper (remove)
    Sesame Oil, 1 tbsp (remove)

    Laksa:

    *(OXO) Vegetable Stock Cube, 1 serving (remove)
    Butternut Squash, 2 cup, cubes (remove)

    (Laksa Paste):

    Garlic, 2 cloves (remove)
    Ginger Root, 0.25 cup slices (1" dia) (remove)
    Jalapeno Peppers, 1 pepper (remove)
    Turmeric, ground, 1 tsp (remove)
    Scallions, raw, 6 medium (4-1/8" long) (remove)
    *Peanut Butter, chunk style, 0.3 tbsp (remove)
    Kaffir Lime Leaves x 4, 1 serving (remove)
    Cilantro, raw, 10 tbsp (remove)
    Sesame Oil, 1 tbsp (remove)
    *Soy Sauce, 2 tbsp (remove)

    (rest of Laksa ingredients)

    Soba Noodles, 250 grams (remove)
    Asparagus, fresh, 8 spear, medium (5-1/4" to 7" long) (remove)
    Coconut Milk (Silk), 1.5 cup (remove)
    Limes, 3 fruit (2" dia) (remove)

Tips

In the original recipe, Jamie says this recipe serves 4 but those portions are humungous so I made it 6.


Directions

Press the Tofu according to packet instructions.

Cut tofu into cubes and toss with other 'tofu' ingredients

Stir Fry on a high heat until the outside of the tofu is dark and crisp.

Meanwhile make up 800ml stock with water and stock cube, pouring water into a big saucepan with cube.

Grate all the squash in food processor and tip into stock.

Blitz all the Laksa Paste ingredients and then tip these into stock.

Trim asparagus, halve and add along with coconut milk.

Once boiled season to taste and serve with the tofu, cilantro and lime wedges to garnish.
