Introduction

No flour, no white sugar! No flour, no white sugar!

Ingredients

    2 1/2 c. Old fashioned oats, chopped in blender if desired
    2 T. ground flax seed meal
    1 cup Greek yogurt, nonfat
    3/4 cup canned pumpkin (or 2 mashed bananas)
    2 eggs, beaten
    1/2 c. honey (more if you prefer things sweet)
    1 t. vanilla extract
    1/4 c. walnuts, if desired
    1/2 cup dried fruit, if desired (or chocolate chips)
    1 t. cinnamon
    2 t. baking powder
    1 t. baking soda


Tips

These muffins are chewy and heavy -- just the way I like them. If you are looking for a light and fluffy muffin, this isn't it! I also like these made with bananas instead of pumpkin and chocolate chips in place of the dried fruit.


Directions

Heat oven to 350 degrees. Combine oats with wet ingredients. Set aside. Stir dry ingredients together. Stir into wet ingredients. FIll greased muffin tins and bake for 20 minutes or until toothpick comes out clean.
