Introduction

Kind of a spin off of the Olive Garden's Zuppa Toscana soup with less calories! Kind of a spin off of the Olive Garden's Zuppa Toscana soup with less calories!
Number of Servings: 8

Ingredients

    1 14oz pkg 93% lean Turkey Sausage
    1 Cup chopped onions
    2 Tsps pressed garlic
    2 Med potatoes skin on, diced into 3/4" cubes
    1 Tsp crushed red pepper
    1 1/2 Cups beef broth
    1 1/2 Cups chicken Broth
    1 bunch kale, rib removed, sliced into ribbons
    1 Cup Fat free Sour Cream
    Salt & Pepper to taste


Directions

Brown Turkey, onions until turkey is done and onions are translucent, add in pepper flakes and garlic and stir for 30 seconds. Add in the potatoes and all of the broth and cook until potatoes are done, approx 11-15 minutes. Add in the kale and cook for another 10 minutes. Turn off the heat and stir in sour cream along with salt and pepper to taste.
