Ingredients

1/2 tsp coconut oil
1/4 cup diced onion
1 tsp minced garlic
2 baby bella mushrooms
2/5 block extra firm tofu
1/2 cup fresh baby spinach
2 tbsp nutritional yeast
1/8 tsp tumeric
1/8 tsp cumin
1/8 tsp garlic powder
salt
pepper
1/4-1/2 cup water
Tips
This is great served in a tortilla with salsa.
Directions
Put the coconut oil, garlic and onion in a saute pan over medium heat. Stir occasionally as you slice the mushrooms and crumble the tofu. Add the mushrooms to the pan and let them cook down.
Meanwhile, in a small bowl mix the nutritional yeast, tumeric, cumin, garlic powder, salt and pepper with the water and whisk to combine.
When the mushrooms are tender, add the tofu to the pan. Let it cook for 4-5 min and then add the spice mix. Add the spinach. When the water has evaporated, you're ready to eat!
