Ingredients
-
3 medium red apples, peeled
1/4 cup unsalted butter (or margarine)
1/3 cup brown sugar (or Splenda brown sugar)
1/2 cup Quaker Oats, plain, quick-cook style
Directions
Set oven to low broil, or "top melt."
Thinly slice the apples and place in microwave-safe bowl. Add 1/2 cup water, and microwave 2-4 minutes, stirring frequently and adding more water as necessary until all slices are soft.
Meanwhile, combine room-temperature butter or margarine with brown sugar. Pour in oats. I used my hands to mix it, but a fork would work as well. Once the mixture has formed into small lumps and balls, set aside.
Mostly drain cooked apples, leaving some water, and put in bottom of an oven safe pie pan or loaf pan. Sprinkle with oat/sugar mixture. If oven is on low broil, leave door open and check frequently. Cook 10-15 minutes until butter has melted and sugar and oats are crisp.
Makes 4 3/4 cup to 1 cup servings.
This would be healthier and still tasty with Splenda/margarine substitutes, but I was working in grandma's kitchen, so I didn't have those at hand. I also think you could leave on some of the apple peel, but my boyfriend is allergic to fruit skin, so I had to take it off. enjoy!
