Introduction

Easy-to-make vegetarian bean mixture to use as the basis of a healthy, hearty taco salad. Add lettuce, greek yogurt, fresh bell peppers, and a low-cal tortilla chip (I use La Favorita), and it's done! Yummy! Ingredients

    3 - 14.5 oz cans hominy
    1 - 14.5 oz can pinto beans
    1 - 14.5 oz can diced tomatoes
    1 - small can green chili peppers, diced
    1 1/2 tblsp. taco seasoning
    1 tblsp. chili powder
    1/2 tsp. lime juice
    salt and pepper to taste

Tips

For Taco Salad: Serve over lettuce & bell peppers. Top with greek yogurt, salsa, and crumbled low-cal tortilla chips. (None of these additional ingredients are counted in calorie total.) I recommend La Favorita tortilla chips at 60 calories a serving to keep the overall calories reasonable.

Can also be used in tacos, nachos, or any other mexican dish as hearty meat substitute.

I like to make a batch to keep in the fridge for lunches. Keeps well for up to two weeks.


Directions

Open all cans. Drain out extra liquid and rinse the hominy and pinto beans. Dump into soup pot. Add spices and lime juice. Cook on medium until hominy is tender to your taste: 10-30 minutes.

Serving Size: Makes appx. 7 1-cup servings. (Depending on how much you cook down the liquid.)
