    1 TBSP Ground Flax seed
    1 CUP Blueberries, fresh
    1 CUP Quick Oats
    1 CUP Milk (Calorie content is with 2% Milk)
    1 TBSP Lemon Juice
    1 CUP Whole Wheat FLour
    1 TSP Baking Powder
    1/2 TSP Baking Soda
    1/4 TSP Cinnamon
    1 TSP Salt
    1 lg egg
    1/4 CUP Applesauce, unsweetened
    3/4 CUP Brown Sugar


Super moist! The batter will seem thin!


Preheat oven to 375 degrees

Wash and dry berries.

In a small bowl mix milk and lemon juice then stir in oats. Allow to set 5 minutes.

In med. bowl combine flour, baking powder, baking soda, salt and cinnamon.

In large bowl and using an electric mixer, mix egg, applesauce and brown sugar for 3 minutes on med. speed. Mix in oat mixture. Then stir in flour mixture. Fold in berries.

Fill muffin cups 3/4 full. Bake 15 minutes or until toothpick inserted comes out clean.

Serving Size: 16 regular sized muffins
