Ingredients

    1/2 cup coconut milk (unsweetened)
    1/4 cup lime juice
    1 Tbsp. curry powder
    1 tsp. ginger root
    1 lb. shrimp
    salt and pepper, to taste

    2-3 scallions, chopped (optional)
    1 Tbsp. toasted sesame seeds (optional)

Directions

Mix the coconut milk, lime juice, curry powder, and ginger root in a small saucepan and bring to a boil. Reduce immediately to a slow simmer for 30 minutes, stirring occasionally.

Peel shrimp and broil for two minutes on each side, seasoning with salt and pepper, to taste.

Put the shrimp on a plate and spoon sauce over it. Serve over rice or pasta. Garnish with chopped scallions and toasted sesame seeds, if desired.

    Good, served over brown rice, and added frozen peas at the end, really good cold the next day for lunch. - 3/17/08
